Pinot Meunier
Our Pinot Meunier is made in the same way as our Pinot
Noir.  It is fermented in small one ton lots.  Punch down is
by hand twice daily and temperatures are closely watched.  
Malolactic fermentation is induced as primary fermentation
ends and the lightly pressed wine goes into French oak
barrels for about one year.  Very little or no fining or
filtration is used.  All racking is done by gravity.

Chardonnay
Our Chardonnay is crushed and pressed, then settled and
fermented in stainless steel.  A clean neutral yeast is used
and a malolactic ferment is induced.  Bottled in the late
summer after a light filtration, it is released in the fall.
  

Rosé of Pinot Noir
Our dry Rosé is produced by stemming and lightly crushing
estate grown Pinot Noir grapes, adding yeast and malolactic
culture and leaving the juice in contact with the skins for 24
hours or until the desired color is achieved.  We then press
out and continue the fermentation in stainless steel.  The
wine is lightly filtered if needed, bottled and ready for an
early summer release.

Sparkling Wine
Our Sparkling Wine is a blend of whole cluster pressed Pinot
Noir and Pinot Meunier with crushed and pressed
Chardonnay which has been fermented separately in
stainless steel and blended to make our cuvee.  Secondary  
fermentation in each bottle is followed by hand riddling and
disgorging, using traditional Methodé Champenoise
techniques.
